Meet The Chef

Stephen, a Tyrone man, started working in kitchens from the young age of thirteen, inspired by his mother Patricia and great aunt Kathleen's love for cooking.

At Dunluce Lodge we take great pride in celebrating the rich bounty of Northern Ireland’s local farms, fields and waters. Chef Stephen’s philosophy revolves around seasonable and sustainable farming practices. This approach not only benefits the quality of each product but also enhances the flavour. Our menus evolve with the changing seasons, allowing us to showcase the freshest and most flavourful ingredients available throughout the year. We are committed to supporting local producers and artisans who share our passion for quality and sustainability.

Chef Stephen’s Northern Irish “Pure Indulgence” Signature Sharing Dish which is a celebration of all things local. It's a sharing platter with a range of artisan produce from across Northern Ireland, with each supplier having been hand-picked for their quality and passion. This dish is comprised of Ewings Award winning Smoked Salmon from Co. Antrim, Ecclesgreen Heritage Pork from Lisdergan Butchery Co. Tyrone, Alastair’s Irish Black Butter from the North Coast Co Antrim, Corndale Farm Chorizo from Limavady Co Derry/Londonderry . Having all these unique elements from around Northern Ireland makes this dish the ultimate homage to the local supplier.

Festive Wreath Making With Afternoon Tea

Join us on Thursday 27th November from 12 noon to 3.00pm for a festive afternoon of creativity and indulgence. Guided by David McConkey, an award-winning florist, you will craft your own handmade Christmas wreath - perfect for adding a personal touch to your seasonal decor.

Once your masterpiece is complete, relax and enjoy a luxurious Festive Afternoon Tea, complete with freshly baked scones, delicate finger sandwiches and festive sweet treats - all complimented by a choice of premium loose-leaf teas.
